Biting into each piece reveals an elegant balance of sweet-savory braising broth alongside the bright, aromatic citrus notes of minced yuzu peel folded into the vinegared rice. Reversing the fried tofu tempers its oiliness, blending seamlessly with the tender, loosening rice grains for a light finish that invites reaching for second and third helpings.

Offered alongside the inari are kanpyo maki rolls. Dried gourd strips simmered thoroughly in a rich, savory broth are rolled in fragrant toasted nori seaweed and served cut into four bite-sized segments.
